

Simple Udon in Broth
Rice cake is very familiar food for Koreans. This recipe is for traditional rice cake dessert called “Kyung-dan”. It’s great for gift or for dessert with tea, and it’s so chewy and really delicious. You can controll the amount of sweetness by adding more or less sugar depending on your taste.

1 packets of udon soup base dissolved in 450ml water (or veggie broth seasoned with soy sauce)
3/4 cup of boiling water
1/2 packet of Enoki (Japanese mushroom) or other mushroom availabl
1/2 packet of PH Food's silken tofu (buy the one for soup type) - dice
1 small packet of fresh udon noodle
Bring water to a simmer in the pot.
Add in the udon soup base and stir.
Add enoki/mushroom and tofu to the simmering soup.
In another pot of water, cook the udon noodles for approximately 3 minutes.
Drain the noodles and place into a bowl.

Garnish with your favourite toppings (tempura, nori, grilled chicken, etc...)
